The Domaine Avéla owns one of the smallest vineyards in the region 4 ha and is run according to certainly unique artisan specifications.
Located in the hills of Creissan, a small typical village at the gates of the Parc Naturel du Haut Languedoc.
Made up of a selection of old vines, having been first planted in 1911 (Carignan, Grenache, Syrah, Cinsaut).
Facing South, in the heart of the garrigue, it enjoys exceptional soil and aromatic environment.
The artisan cultivation of the vine is done the traditional way with precision and rigour.
The very short goblet pruning, along with carefully targeted vendanges en vert, gives small yields, around 15 hectolitres per hectare, ensuring an optimal quality.
An aeration of the stalk by stripping buds and leaves by hand several times helps to obtain a healthy harvest at full maturity.
The treatments (organic wine certification) are done in a very precise way with a back atomizer for a greater efficiency and for ecological concerns.
The manual harvest, with a first grape selection in the vineyard, is done solely in the freshness of the morning. The fresh grapes are delicately placed in small crates and quickly taken to the cellar. The late date of the harvest helps to obtain grapes that are at the quintessence of their maturity.
The work in the cellar is done with precision and passion, in the respect of traditions.
The second grape selection is done by hand, container per container.
Destemming 100 %
The crushing is done the old way.
Each grape variety (cépage) is vinified separately.
The macération pelliculaire, without added yeasts, is long, with two to three daily manual pigeages.
The manual pressing is done with a traditional vertical winepress.
Wine ageing (24 monts) takes place in French oak barrels (Seguin-Moreau).
The bottling by gravity of the no-filtered wine is done by us in our cellar.
